Our story

A city restaurant with a field of view.

Morrow began with a simple question: how close can a restaurant stay to the people and places that feed it?

Beginning

Opened in 2023

Built around a working relationship with the season.

Morrow was founded by chef Mara Vos and dining room director Elisa Hart after years spent in kitchens and small wine bars across the Netherlands and northern France. They wanted the focus of a destination restaurant with the ease of a neighborhood room.

The result is a dining house that changes without performing the change. Menus move, jars accumulate, growers arrive at the back door, and the room remains warm, direct and recognisable.

“The most modern thing we can do is pay very close attention to what is already here.”

— Mara Vos, chef and co-founder

Provenance

Sourcing as a practical relationship, not a slogan.

We work with a small circle of growers, fishers, millers and makers. Some supply one ingredient for three weeks; others stay visible throughout the year through grain, preserved fruit or cellar work.

Buying close to home does not mean forcing a neat border around the pantry. Coffee, citrus, pepper and wine arrive from farther away, chosen with the same attention to farming, labor and taste.
