The first tomatoes, and the menu they changed

Why the arrival of one warm crate moved three dishes and gave the summer menu its centre.

The first tomatoes arrived warm from the van, fragrant enough to change the plan before the crate reached the kitchen. We moved them from garnish to center: clear tomato water at the opening, slow-roasted fruit beside brill, and skins fermented for a sharp, savory dressing.

A field visit makes distance measurable. In Westland, the conversation was about irrigation, shade and when a leaf tastes most alive—not abstract sustainability language. Those details now shape how we order, store and write each vegetable onto the menu.

A room made for Sunday

The thinking behind our long lunch: fewer decisions, slower tables and the whole room in daylight.

Sunday lunch gives the room a different tempo. Daylight reaches the pass, guests stay longer, and the menu can be a little broader and more generous. The format is four courses, but the real design decision is time: enough of it, with fewer interruptions.
